Old St. Hubert Church — Community Discussions Coming Soon
Last week the Save Old St. Hubert (SOS) Committee shared that community discussions around the future of Old St. Hubert Church are on the horizon, with a focus on possible repurposing and restoration options. We'll be watching closely and will share updates as they develop.

Dandy Lion Coffee — The Chanhassen Roaster Who Started With a Dandelion
Before Charlie Hansen ever roasted a coffee bean, he was roasting something you'd normally pull out of your yard. That's not a metaphor — Charlie started with dandelion roots, and somehow turned that experiment into one of Chanhassen's most interesting small businesses.
Getting there wasn't a straight line. Charlie studied architecture at North Dakota State University, fell in love with building things with his hands, and spent years in videography and media marketing before finding his way to a roaster. "There's craftiness built into me," he's said. It just took a while to find the right craft.
Today, Dandy Lion Coffee is a locally owned specialty roastery rooted right here in Chanhassen. Charlie roasts every Tuesday in small batches, with a commitment to sourcing beans from farms that pay fair wages — because the quality of the coffee, he believes, starts long before it reaches the roaster. The result is coffee that's approachable without being dumbed down. No snob factor. Just a great cup.
The roastery is tucked inside a warehouse at 7924 Kerber Blvd — not exactly a high-foot-traffic corner, but that's never stopped anyone who knows about it. A 24/7 outdoor pickup locker keeps fresh coffee available around the clock. Pay by Venmo or PayPal, grab your bag, and go.

The Chanhassen City Council meets this Monday at 7700 Market Boulevard. The 5:30 PM work session will cover a Fire Department space needs assessment follow-up, a permitted burning discussion, 2026 park renovation fund allocation, and a discussion on consumption, display, and brew pub liquor license types. Henry and Martha Lyman - Chanhassen Historical Society
1853 — Henry Lyman arrived in Chanhassen Township in 1853, becoming the area's first postmaster and clerk. Widely respected for his agricultural and horticultural abilities, he is believed to have planted the first apple tree in all of Carver County. Today, Lyman Boulevard bears his name.

Swine — At the first town meeting on May 17, 1858, Chanhassen residents voted to let all animals roam free — except pigs. The swine had to wait a full year before they were finally granted the same freedom as everyone else in 1859.
